One of the simplest desserts to make, it will outclass any complicated dessert with its decadent flavour combination of Baileys, whipped cream and cream cheese. Mascarpone adds an extra smooth silky texture to the cheesecake to melt in your mouth. It takes minutes to prepare and as it is no bake you can just pop it in the fridge until it is ready to go!

Ingredients

  • For the base:
  • 170g wholemeal digestive biscuits
  • 50g dark chocolate, melted
  • 2 tablespoons butter, melted
  • For the filling:
  • 225g cream cheese
  • 80g honey
  • 120ml Baileys Irish Cream Liqueur
  • 220ml double cream
  • 80g mascarpone cheese
  • Chocolate swirl topping:
  • 85g dark chocolate, chopped
  • 40ml single cream
  • 1x6 inch springform cheesecake tin

Instructions

Add the digestives biscuits to a food processor and pulse until crumbled. Add the melted dark chocolate and melted butter and mix until it is well combined.

Line a cheesecake tin with greaseproof paper. Place the digestive mixture into the tin and press down with the back of a spoon. Place into the fridge or freezer until it sets or hardens.

Place the cream cheese and honey in a bowl and whisk with an electric beater until well combined. Add the mascarpone and whisk until thick.

In a separate bowl whisk the double cream until thick and add this together with Baileys to the cream cheese mixture. Whisk until thick.

Place the mixture over the digestive base and smooth with a palette knife. Set aside while you prepare the ganache topping.

To make the chocolate swirl ganache, add the chocolate to a glass or metal bowl (I find metal best as the chocolate keeps dissolving from the heat of the bowl when mixed). Bring the cream to just boiling and add to the chocolate, whisking continuously until the chocolate has dissolved. Leave to rest for 5 minutes.

Add the chocolate to the cheesecake by placing blobs all over the top of the cheesecake. Take a chopstick and lightly swirl to form a nice pattern.

Place in the fridge until set and ready for serving.  Serve with a glass of Baileys on the rocks!
