Yesterday I started reminiscing about Decembers and traditions I had as a child. I remember the laughter, the warmth of family and those moments that felt so perfect. It isn’t the presents I remember it’s the moments when we were together. There are people we miss who will no longer be present but will always be a part of the spirit of Christmas. Every Christmas is a chance to create new memories with the ones we love, some old and some new. It’s so important not to get caught up with the mad Christmas rush, to be less materialistic, to live for the moment and be part of the spirit of someone else’s Christmas ❤️

Some photoshoots leave a lasting impression, and then there are those that you wish could go on forever. I’m thrilled to unveil one of my most exciting projects to date with @fitziesfood . Over the course of five incredible days we shot and styled more than 150 mouthwatering sweet and savoury dishes that you can order at the touch of a button. Working with Kerri, Sheena, and the entire team was incredible as we all worked seamlessly towards the same vision. Now that Halloween is over I feel it’s time to t

Now that Halloween is over I feel it’s time to take a break from pumpkins and delve into one of my favourite ingredients: coffee! For me coffee is more than just a morning pick-me-up. It’s a complex flavour experience that can transport your taste buds to another world ❤️For me coffee can change my mood, improve my social life (yes I make friends in cafes!), give me extra energy and also give me different flavours in my sweet and savoury recipes:
Fruity, nutty, chocolatey, spicy, floral and earthy. My coffee palette changes with the seasons and
my friends know I’m so particular about having a good cup of coffee that I’d never compromise buying a capsule machine and I love my coffee strong so I can taste the real flavour. But that’s just my opinion 😉❤️

ROASTED PUMPKIN & FETA SOUP
It’s Halloween and now that the kids have left home I’m happy with my savoury treats 🧡 This is the easiest soup you could make as everything is roasted in one tray and blended with stock. No need for measurements just roast as much as your blender will take and add as little or as much stock and as little or as much feta as you like. Happy Halloween 🎃 🧡

I’m currently in Spain visiting my family where I would typically be enjoying a sunny afternoon on a terrace with a tapa or two. However instead of basking in the warmth we’re braving the rain and floods 😥 and thinking of those who are less fortunate than us. In light of the chilly damp weather we are indulging in comfort food. First course is a comforting bowl of pumpkin soup one of my favourite cosy autumn soups🍁 Today is a reminder that even in the midst of unpredictable weather there’s comfort to be found in simple nourishing meals🧡

Last night the skies over the Old Head of Kinsale

Last night the skies over the Old Head of Kinsale put on a breathtaking display as the aurora borealis graced the horizon. I decided at midnight to jump in the car with my family away from artificial street lights not knowing whether we had missed it or not. The aurora painted the night sky with vibrant hues of green, pink and purple and the stunning backdrop of the rugged coastline and the twinkling stars created a magical atmosphere that felt almost out of this world. Moments like these make you appreciate why you should live in the moment 💕💙💗💜

Fruit for dessert? Absolutely! On a recent trip to Belfast, my birthplace, I was thrilled to visit the famous Mamo Patisserie, known for its exquisite and creative pastries that are as beautiful as they are delicious. With Mamó meaning “grandmother” in Irish the charm extends beyond just the name 💚 They serve the best sausage rolls I’ve ever had and I couldn’t resist following that with my favorite seasonal fruit 😉 If you’re in Belfast Mamo is a must visit especially when combined with a shopping trip to St George’s Market. And if you’re anything like me you’ll definitely be bringing home a box of pastries! 💚💚

I was delighted to be invited to host a workshop on food photography with Ballincollig Camera Club recently. I decided to embrace the season and baked a pumpkin Bundt cake which turned out to be a great choice 🍁Its rich colour and texture really show off the gorgeous autumn colours 🍂To set the autumn vibe I added some locally sourced pine cones and autumn leaves giving everything a nice personal touch. Using these natural elements can create a warm and inviting atmosphere making the food the star of the show while complementing it with nature’s beauty 🍂I styled the cake and the scene as part of the workshop to demonstrate movement and how different angles and lighting can dramatically change the mood of the image. The following week the participants had the chance to try out the techniques they learned for their food photography competition and I’m delighted to be a judge in the competition. Best of luck to all who took part 🧡

As we wave summer goodbye, we are embraced by that refreshing chill in the air and a gentle reminder that change is all around us🧡As the days grow shorter I find myself reflecting more, thinking about what I’m grateful for and what I hope to work towards in the coming months. Autumn is a gentle reminder to embrace change, to let go of what no longer serves us and to welcome new beginnings 🧡 Hug your loved ones close in this cosy season and make lots of memories you can look back on 🧡 Here’s to an autumn full of crisp autumn walks, pumpkin spice lattes, cuddly sweaters, and evenings spent wrapped up in blankets 🧡🍁

Just because summer has come to an end it doesn’t mean that salads are off the menu. Even as the weather cools down salads can still be a delicious and refreshing addition to any meal ❤️ This is one of my favourite autumn salads combining the smoky flavour of griddled courgette with the creamy texture of mozzarella cheese and the sweetness of pomegranate seeds. So don’t let the changing seasons stop you from enjoying delicious salads as they can be the best part of the meal❤️❤️
