Chickpea Pizza Base

I love pizza. I mean who doesn’t? But if you are like me and find wheat just doesn’t agree with you then we are lucky there are delicious alternatives out there. Instead of chickpea pizza base, I was going to name this hummus pizza base but then you probably wouldn’t have found this post. However, this is exactly what it is: all the ingredients of hummus but so much more! What I love about this is you can control the thickness yourself. You can spread it on the base of an oven proof pan as thinly or as thickly as you like.

It is grilled for 10 minutes before you top it with your favourite toppings then finished off in the oven.  I add some paprika and dried herbs to give it that Mediterranean taste. Topped with my homemade tomato pizza sauce then roasted Mediterranean vegetables this makes it my favourite pizza of all time. Now we can enjoy pizza nights with the family like never before!

Ingredients

  • 200g chickpea flour (whole dried chickpeas for thermomix)
  • 1 clove garlic, crushed
  • ½ tsp paprika
  • ¼ tsp ground turmeric
  • Pinch of salt and pepper
  • 230ml hot water (not boiling)
  • 20g olive oil plus 1 tbsp for grilling
  • 2 tsp light tahini paste
  • 1 tbsp lemon juice
  • 1 tbsp dried mixed herbs
  • 1 x oven and grill proof pan

Instructions

Preheat the grill to a medium setting.

Mix the chickpea flour, crushed garlic, paprika, turmeric and seasoning in a food processor and pulse until well combined. Add the herbs and blend slowly to mix well. Alternatively you can mix it by hand.

Add the hot water, olive oil, tahini and lemon juice and pulse until well combined. It will appear more runny than hummus.

Heat 1 tablespoon of olive oil in the pan under the grill for 1 minute until piping hot.

Spread the chickpea pizza base over the bottom of the pan to the desired shape and thickness. You can spread it as thinly as you like.

Place the pan under the grill pretty low down towards the bottom of the oven. Cook for 10 minutes until lightly golden, checking at regular intervals to avoid burning.

Leave to cool slightly before topping with your favourite pizza tomato sauce and pizza toppings. Bake for a further 10 minutes in the oven. Enjoy!

 

Thermomix Version

Add chickpeas to the TM bowl and grind 15 Sec/ Speed 10. Scrape down the sides and pulse again 20 Sec/ Speed 10

Add the garlic and blend 10 Sec/ Speed 10. Scrape down with a spatula.

Add the paprika, turmeric and seasoning and mix 3 Sec/ Speed 5.

Add the hot water, olive oil and tahini paste and blend 10 Sec/ Speed 5. Scrape down the sides and blend again 5 Sec/ Speed 4.

Heat 1 tablespoon of olive oil in the pan under the grill for 1 minute until piping hot.

Spread the chickpea pizza base over the bottom of the pan to the desired shape and thickness. You can spread it as thinly as you like with a palette knife.

Place the pan under the grill as low down as you can towards the bottom of the oven. Grill for 10 minutes until lightly golden, checking at regular intervals.

Leave to cool slightly before topping with your favourite homemade pizza tomato sauce and pizza toppings. Bake for 10 minutes in the oven. Enjoy!
